Radish and radish leaves are great source of vitamin C, calcium potassium, folic acid and copper. Radishes are a must-have during pregnancy for its nutritional value. It is a rich source of calcium, an important nutrient you need to have during pregnancy.
Radishes are also a storehouse of folic acid, which is a vital nutrient for pregnant women. Appropriate folic acid levels in the body protect your baby against any birth defects. Here is how you can make Mooli ka Saag or Radish Greens Sabji.
- 4 medium radishes (mooli) with leaves
- ½ tsp mustard (rai/sarson) seeds
- ½ tsp cumin (jeera) seeds
- ½ tsp turmeric (haldi) powder
- 1 tsp red chilli powder
- 1 tsp dry mango (amchur) powder
- 1 ½ tsp sugar
- Pinch of asafoetida (hing)
- Salt to taste
- 2 tbsps oil
Wash the radish and the leaves with water. Chop the white part of the radish into small cubes and shred the leaves. Sprinkle a little salt on the radishes and set aside for fifteen to twenty minutes.
Heat oil in a pan and add mustard seeds. When they crackle, add cumin seeds and asafoteda and sauté for half a minute. Add red chilli powder and turmeric (haldi). Sauté for ten seconds. Add radish and leaves. Cook for a minute.
Add little water to prevent scorching. Cover the pan and cook on medium heat for ten to twelve minutes or till the radish is nicely cooked. Add a pinch of salt for taste. Sprinkle sugar and dry mango (aamchoor) powder and mix well. Serve hot with chapatis or paranthas.
