This soup is a super healthy one to be relished on a cold day. It has a unique flavour to it and is sure to give you enough energy to help you stay warm.

  • Cauliflower – 1 medium
  • Water – 2 cups
  • White pepper powder – 2 tsps
  • Tabasco sauce (red) – a few drops
  • Cornflour – 1 tsp
  • Salt to taste

Cut half of the cauliflower into big florets and the other half into medium florets and soak in salted water for 10 mins to get rid of any worms. Strain and keep medium sized florets aside.

Grate the big florets on the finest side of a grater. Heat 2 cups of water in a saucepan and bring the water to a boil. Then add the grated cauliflower and cook for 5 mins. Add the medium florets, salt to taste and white pepper powder and cook till the florets are done. They should still be firm to touch.

Mix the cornflour with a little water and then add to the soup. Simmer on low flame for 2-3 mins. Add more water as per your desired consistency. As soon as the soup thickens a bit, turn off the flame. Serve in a soup bowl and drizzle a few drops of Tabasco sauce.

Mix well and enjoy the soup while hot.
