Broccoli Soup Recipe

This super soothing soup is an abundant source of vitamin C, vitamin A and folic acid, perfect mid evening meal for pregnant women during the entire phase of pregnancy. The awesome combination of broccoli, milk and onions gives the the soup a creamy texture and a yummy taste

Ingredients

  • 1 cup broccoli florets
  • 1 tsp oil
  • 1/2 cup chopped onions
  • 1/2 cup milk
  • Salt and pepper to taste

Method

  1. Heat the oil in a deep non-stick pan, add the onion and sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.
  2. Add the broccoli and 1½ cups of water and mix well. Cover with a lid and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Keep aside to cool slightly.
  3. Blend the mixture in a mixer to a smooth purée.
  4. Transfer the purée back into the same deep non-stick pan, add the milk, salt and pepper, mix well and bring to boil. Serve immediately.
